Finca Idania is a family farm in the Alotepec-Metapán mountain range, near Chalatenango. About half of the coffee planted on the farm is Pacamara variety, which is picked and processed separately from the rest of the harvest to highlight its fruity complexity. Cafenor, a specialty exporter with its own solar-powered, certified carbon-neutral dry mill, introduced us to the farm and its owner, Héctor Saul Reina. This is our second time purchasing Pacamara from Finca Idania.
About Pacamara: Pacamara is a cross between the Pacas and Maragogipe varieties. Pacas was first identified in 1949 on a farm in Santa Ana, El Salvador. The variety is a natural dwarf mutation of Bourbon, and its small stature allows farmers to plant trees closer together, increasing farm yield. Maragogipe is a mutation of the Typica variety known for its very large seeds and fruity cup quality. Crossing these two varieties results in brighter, fruitier quality than the typical, more chocolatey Salvadoran profile.
